Jerk Marinated Tenderloin of Pork with
Avocado-Coconut Sauce and
Black Bean-Mango Salsa
Jerk Marinated Tenderloin of Pork
Ingredients:
Discard stems, seeds, and ribs from chiles and coarsely chop (use gloves). Blend chiles with remaining ingredients except pork and olive oil in a food processor until a paste forms. Rub marinade on pork tenderloins. Marinate, covered and chilled, at least 2 hours or overnight.
Heat olive oil in a cast iron skillet or nonstick pan. Sear pork until lightly brown on all sides. Place pork in preheated 350º F oven to finish cooking for 10-15 minutes or to an internal temperature of 160º F. Serve with Avocado-Coconut Sauce.

Heat olive oil in a skillet on medium-heat. Cook onion until brown and caramelized. Add cilantro, Serrano pepper, onion, and coconut milk to blender. Blend until ingredients are combined, and then add avocados.
In a saucepan, heat avocado-coconut mixture on medium heat. Stir until heated through, then add cumin, limejuice, and salt to taste. Serve with Jerk Marinated Pork.
